Crab & Cornflakes
Blue crab has long been ubiquitous in Creole kitchens, often paired with the sweetness of fresh corn in soups, fritters, and salads. This dish reimagines that classic duo with the unexpected crunch of cornflakes. As modern Creole cuisine continues to evolve, this dish draws inspiration from Indian street food traditions, including cornflake chaat. In India, vendors toss crunchy grains with fresh herbs, spices, citrus, and chutneys, creating layered snacks that are tangy, crisp, and refreshing. That same spirit of lively contrast meets the Gulf’s prized blue crab here, resulting in a salad that is light yet indulgent, playful yet rooted in heritage. I often describe my cooking not as spicy, but as “seasoned well.” The spices in this appetizer embody that approach—framing and elevating the natural sweetness of crab and corn rather than overpowering them.

CILANTRO-LIME DRESSING1⁄2 medium red onion, diced1⁄4 cup cilantro, coarsely chopped2 tablespoons fresh lime juice1 clove garlic, smashed1⁄2 teaspoon ground cumin1⁄2 teaspoon kosher salt1⁄2 teaspoon sugar1⁄4 teaspoon freshly ground black pepper1⁄4 cup extra-virgin olive oilCRAB SALAD6 ears yellow sweet corn, husks on1 1⁄2 cups cucumber, peeled, seeded, and diced2 cups grape tomatoes, halved1 medium red onion, diced2 jalapeños, finely chopped1 tablespoon fresh ginger, grated1 tablespoon cumin1 teaspoon coriander1 teaspoon ground fenugreek1 teaspoon chili powder1⁄2 teaspoon turmeric1⁄2 teaspoon mustard powder1⁄2 cup cilantro, coarsely chopped2 tablespoons fresh mint, coarsely chopped1 pound jumbo lump crabmeat2 cups unsweetened cornflakessalt to tasteMAKE THE DRESSING: In a blender or small food processor, add the onion, cilantro, lime juice, garlic, cumin, salt, sugar, and pepper. Puree until smooth. With the machine running on low speed, slowly drizzle in the olive oil until it is fully incorporated. Set aside 1⁄2 cup for the salad. The remaining dressing can be refrigerated for up to 5 days.
MAKE THE SALAD: Heat a grill to medium-high (about 400°F). Place the corn, still in its husk, directly on the grates. Cook, turning occasionally as the husk darkens on each side, until the kernels are lightly browned all over (peel back the husk to check), 10 to 15 minutes. Remove from the grill and let cool to room temperature. Using a sharp knife, slice the corn kernels off each cob. Transfer the kernels to a large bowl. Add the cucumber, tomatoes, onion, jalapeño, and ginger; toss well to combine. Sprinkle the cumin, coriander, fenugreek, chili powder, turmeric, and mustard powder over the vegetable mixture. Toss well. Immediately before serving, add the crabmeat, cilantro, mint, and cornflakes. Toss gently to combine without breaking up the cornflakes or lumps of crab. Add the dressing and toss gently to coat. Season with salt, then serve.
